Fish Tacos with Chipotle Lime Cilantro Slaw

    Ingredients:

    • Fish:
      • 12 (16 oz.) fish fillets
      • 1 package low sodium fajita seasoning
      • 1 teaspoon coconut oil
    • Slaw:
      • 1 package cole slaw mix
      • 1/4 cup light mayo
      • 1/4 cup lime juice
      • 1/2 cup plain greek yogurt
      • 1/2 chipotle pepper (in adobo sauce)
      • 1/2 teaspoon adobo sauce
      • 1/4 cup cilantro
    • For serving:
      • 8 small white corn tortillas
      • diced tomatoes
      • sliced avocado

    Instructions:

    1. Sprinkle fajita seasoning on fish, let marinade while making slaw.
    2. Mix slaw dressing together in a food processor and add to 1 package cole slaw mix.
    3. Sauté fish in 1 teaspoon of coconut oil until cooked through. Flake with a fork. (Fish is also delicious grilled!)
    4. Divide fish between tortilla shells and top with slaw, diced tomatoes and sliced avocado.
