Oven Roasted Root Vegetables

Ingredients:

  • 2 large potatoes
  • 3 large carrots
  • 2 turnips
  • 1 large onion
  • 1 small rutabaga
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F.
  2. Peel, and chop the vegetables into 1 inch squares. Add to a large roasting pan.
  3. Add seasoning, salt and pepper. Add olive oil and toss to coat.
  4. Roast in oven uncovered until vegetables are tender.
