CentraCare and Carris Health care givers have been working around the clock for more than 20 months to care for you, your families and friends during COVID. We are committed to caring for every Minnesotan who needs us, and nothing will prevent us from doing so – even during these never-seen-before times.

The challenge of providing this level of care is that our hospital beds are often full. ERs in all of our hospitals are packed. And our clinical teams are exhausted. Early in the pandemic, our community stepped up in amazing ways to helps us. We ask that you again join us in fighting this pandemic together.

Detox Salad

Ingredients:
    • 2 cups kale
    • 2 cups broccoli florets
    • 2 cups Brussels sprouts, roughly chopped
    • 2 cups red cabbage, roughly chopped
    • 1 cup carrots, roughly chopped
    • 1/2 cup fresh parsley
    • 1/2 cup almonds
    • 1-2 tablespoons sunflower seeds
    • 3 tablespoons olive oil
    • 1/2 cup lemon juice (or juice of 2 lemons)
    • 1 tablespoons ginger paste
    • 3 teaspoons Dijon or spicy mustard
    • 2 teaspoons honey (or maple syrup)
    • 1/4 teaspoon sea salt

    Instructions:

    1. Using a food processor, process all the veggies (except parsley) until finely chopped and mix together in a large bowl. This may take a few batches.
    2. Add almonds to the food processor and pulse, until roughly chopped, and mix in with the salad along with the sunflower seeds.
    3. In a small bowl, whisk together all the ingredients for the dressing and drizzle over top of the salad or place in a jar and use as needed.
    4. Enjoy!
